As I entered this year’s Fall Charity event, the room was a buzz, but it wasn’t about the silent auction. Ladies and Gents dressed in their best were touting, “I’ve never felt better, pounds were just falling off, or belts were cinched several notches tighter.”

Keto Pancakes
3 egg whites, whip with a wire whisk until frothy, add 2 tablespoons coconut flour or almond flower, 1 teaspoon baking powder, 2 tablespoons softened butter and a couple of tablespoons of sour cream or regular cream. Continue to beat after each addition. Heat a buttered frying pan, pour a pancake size batter and watch it bubble before turning. Cover with butter and enjoy with your favorite breakfast meat and vegetables.
